Yes. Google Classroom is a website at classroom.google.com and works in any browser on Linux. The apps Google offers are for phones and tablets, not for Windows desktops.

Google's own help page tells you to go to classroom.google.com and sign in, with separate instructions only for Android and iPhone. There has never been a Windows desktop program, so nothing is lost by moving to Linux.

Sign in with the same school or personal Google account and every class, assignment, due date and comment is already there. Nothing is stored on the computer, so there is nothing to back up before you wipe the Windows machine.

The work attached to classes is the part worth checking. Assignments are usually Google Docs, Slides or Sheets files, which open in the browser on Linux without any trouble. If a teacher hands out .docx or .pptx files instead, LibreOffice opens those, and Google Drive will convert them too.

A school that requires a specific browser will almost always accept Chrome, and Chromium or Google Chrome on Linux covers that.
