Yes. Kahoot! is used through a browser at kahoot.it and create.kahoot.it, which works on Linux the same as anywhere else. The extra apps are for phones and tablets, not Windows.
Kahoot! is a website first. Kahoot's own how-it-works page describes hosting games and joining them through create.kahoot.it and kahoot.it, and that is what teachers and students actually use. Any current browser on Linux handles it.
The apps Kahoot! offers are mobile ones, for iPhone, Android and Mac. There was never a Windows desktop program to replace, so a Linux machine loses nothing in the switch.
Hosting a game from a Linux laptop plugged into a classroom projector works fine. The one thing to check is that the second screen is set to mirror or extend the way you want before the lesson, since that is a display setting rather than anything to do with Kahoot!.
Your kahoots live in your account, so signing in on the new machine brings everything with it.
